This is my ultimate quick go-to lunch and a university favourite. What do students on a budget eat if they want a nutritious meal? Why dried pasta and canned tuna of course! Did you know tabasco hot sauce comes from a Mexican town call Tabasco where they grow the chilis?
Total time: 20 minutes
Ingredients
1 200g can tuna (packed in water)
1.5 cups prepared tomato sauce/ragu
1/4 sun dried tomatoes, sliced
1/2 can creamed sweetcorn
1/4 cup half n’ half/cream
1 tbsp hot sauce/ tabasco
2 tbsp chopped Coriander leaves
200 g Penne pasta
Instructions
Salt water and put your penne to boil. Meanwhile, combine tomato sauce, sun dried tomatoes, sweet corn, Tabasco and bring to a boil. Flake in the tuna and add the cream, reduce heat and simmer for 5 minutes. Sprinkle in coriander and keep aside. Drain the pasta saving 1/4 cup of the pasta liquid. This is very rich in starch and added to any pasta sauce creates a glossy finish to the sauce that adheres better to the pasta. Mix the prepared sauce, pasta and pasta water and simmer for a few minutes till it reaches a thick, glossy consistency. Serve hot with garlic bread.
