Thanksgiving Leftovers #2: Turkey Pot Pie

Sorry guys – forgot to take pictures of the pot pie, but basically I made a white sauce with flour/ butter/ turkey stock. I added in shredded turkey, leftover veggies from the bake (potatoes, sweet potatoes, onions), frozen peas and mixed till thick and delicious! You can always add in some fresh herbs – I used thyme and oregano. Spoon it into individual pie dishes, cover with rolled out puff pastry (put a couple of slits in it) and bake at 400F until the pastry was all puffed up and golden (about 20-25 minutes)!
