{"id":448,"date":"2010-09-22T15:03:46","date_gmt":"2010-09-22T19:03:46","guid":{"rendered":"http:\/\/www.gourmetjunkie.com\/?p=448"},"modified":"2013-06-16T21:33:18","modified_gmt":"2013-06-17T01:33:18","slug":"creamy-new-england-style-seafood-chowder","status":"publish","type":"post","link":"http:\/\/www.gourmetjunkie.com\/?p=448","title":{"rendered":"Creamy New-England style Seafood Chowder"},"content":{"rendered":"<p><strong>Time: 45-60 minutes<\/strong><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-449\" title=\"Chowder\" alt=\"\" src=\"http:\/\/www.gourmetjunkie.com\/wp-content\/uploads\/2010\/09\/IMG_8900.jpg\" width=\"440\" height=\"330\" \/><\/p>\n<p><strong>Ingredients<\/strong>:<br \/>\n250 g fish fillets, cubed (1 inch) (I had salmon on hand)<br \/>\n250g mixed seafood (see note below)<br \/>\n4-5 cups whole milk<br \/>\n2 small yellow-flesh potatoes, peeled and cubed (1\/2 inch)<br \/>\n2 cloves garlic, diced fine<br \/>\n1 small red onion, diced fine<br \/>\n1\/2 small green pepper, diced fine<br \/>\n1 celery stalk, diced fine<br \/>\n1 tbsp dried thyme<br \/>\n1 fish stock cube<br \/>\n1\/2 chicken stock cube<br \/>\n4 tbsp olive oil<br \/>\n4 tbsp flour<\/p>\n<p>Use a pot with a tight fitting lid for this recipe. Heat the oil and saut\u00e9 the onions, green pepper and celery for 4-5 minutes (add garlic after 3 minutes so it doesn&#8217;t burn or go dark) until just starting to brown at the edges. Whisk in the flour and crumble in the stock cubes, mixing vigorously\u00a0 for 30 seconds to form a roux.<\/p>\n<p>Pour in 3 cups of milk in a steady stream, whisking to ensure there are no lumps. The mixture will be thick. Add in the cubed potatoes, thyme, and remaining milk, bring to a boil, reduce heat, cover and simmer for 20-25 minutes or until the potatoes are just cooked through. Stir the pot every 5 minutes or so, to ensure the chowder doesn&#8217;t stick to the bottom of the pot.<\/p>\n<p>Add in the seafood, cover and simmer for an additional 10 minutes until cooked through. Use whatever you have &#8211; I had wild shrimp, squid, octopus, and imitation crab meat.\u00a0 Garnish with fresh herbs and serve hot with a baguette!
