1 \u00bd (one-half) lbs beef (sirloin) strips<br \/>\n* 2 onions, roughly chopped<br \/>\n* \u00bc (quarter) bulb fennel, roughly chopped<br \/>\n* \u00bd (half) can plum tomatoes with juice<br \/>\n* \u00bd (half) green pepper, diced<br \/>\n* 1 large potato, chunked<br \/>\n* 1 knob ginger, peeled and shredded<br \/>\n* 4 garlic cloves, chopped<br \/>\n* 2 green chillies, de-seeded and sliced<br \/>\n* 3 cups chicken\/ beef stock (pref. if homemade with cumin, coriander, black pepper)<br \/>\n* 1 tbsp mint leaves, shredded<br \/>\n* 1 tbsp marmalade<br \/>\n* 1 tsp cumin powder<br \/>\n* 1 tsp coriander powder<br \/>\n* 3 tbsp Olive oil<br \/>\n* Salt<br \/>\n* Pepper<br \/>\n* Juice of \u00bd (half) lemon (approx)<br \/>\n* 1 tbsp ketchup (optional)<\/p>\n<p>How to Cook<\/p>\n<p><!--more--><\/p>\n<p>* Heat olive oil in pot, add fennel and onions and saut\u00e9 till just translucent<br \/>\n* Add in ginger, garlic and fry till light brown on edges<br \/>\n* Add in the sirloin strips, cumin, coriander, chillies and fry until meat releases all the juices and they start to dry out (about 5 min)<br \/>\n* Add in the tomatoes and juice, tomato paste, green pepper, potato chunks, mint and stock and bring to a boil<br \/>\n* Upon boiling, lower heat and simmer for about 30 min or until potatoes and beef are cooked through<br \/>\n* Add in ketchup, marmalade and adjust for salt and pepper<br \/>\n* Serve hot over fennel fried rice<\/p>\n<p>&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8211;<br \/>\nFennel Fried Rice<br \/>\nIngredients<\/p>\n<p>* \u00bd (half) bulb fennel, chopped<br \/>\n* 1 green pepper, chopped<br \/>\n* 2 cups cold cooked rice (old)<br \/>\n* 1 tsp cumin, 2 cardamoms<br \/>\n* \u00bd (half) stock cube, 1 garlic clove<br \/>\n* 2 frankfurters<\/p>\n<p>How to Cook<\/p>\n<p>* Heat olive oil in a pan and add in the smashed garlic clove when hot<br \/>\n* Remove garlic clove after it has browned and add in cardamom, cumin, fennel and green peppers and fry till soft and lightly browned<br \/>\n* Cook franks in the microwave and dice, add into mixture<br \/>\n* Mix in cold cooked rice and stir fry till done\u2026 crumble in chicken stock cube for extra flavour and adjust seasonings<\/p>\n<p>&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8211;<br \/>\nCrusty Eggplant<br \/>\nIngredients<\/p>\n<p>* Sliced egg plant<br \/>\n* 2 Eggs beaten (for dipping)<br \/>\n* Italian breadcrumbs<br \/>\n* Flour<\/p>\n<p>How to Cook<\/p>\n<p>* Create breading station<br \/>\n* Dip eggplant in flour, eggs then breadcrumbs and then bake in oven for 45min or until golden and cooked through<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Rich Beef Stew Ingredients * 1 &#8211;
